A Pizza Party!

We love pizza night…the kids LIVE for pizza night! Our friends never mind the invite either 🙂

Last night was THE night! My dough recipe makes it SO easy to crank out as many crusts as you have individual tastes, and let’s face it….everyone loves to design their very own pizza. I believe everyone in my house likes a different kind.

I use this basic dough recipe for pizza, calzones and garlic breadsticks. It can also be used to hold fruit fillings or made into dessert pizza. Kids love to be a part of making the dough. Let your little ones get covered in flour and knead away…it’s the perfect way to integrate them into the kitchen.

Basic Dough Ingredients

1 1/2 cups flour

1 tsp. salt

1 package or 2 1/4 tsp yeast

1 cup very warm water

2 tablespoons olive oil

The Philly Roll…..

This was one of the first rolls I learned to make. Once you get the technique of spreading rice and rolling down, the variations are endless!

This is just like a classic California Roll, just has the addition of cream cheese to it. Cream cheese should be a food group 🙂

Assemble the following ingredients:

Nori (seaweed sheets)

Imitation crab sticks

Cream Cheese

Short Grain Rice (very important that it is short grain)

Seasoned Rice Vinegar

Toasted Sesame Seeds

Avocado (semi soft)

English Cucumber

Wasabi paste (if desired)

Butternut Squash Soup

I am obsessed with roasting vegetables….this recipe is NO exception. There is absolutely no way to get a better flavor from a veggie than roasting. Of course, that’s my opinion…BUT IT’S RIGHT 🙂

I decided to make a roasted squash soup today, throwing in just a touch of curry to compliment the cinnamon that goes in virtually every squash dish I make.

Let’s get this show started….Round up the following ingredients:

1 butternut squash

1 large or 2 small onions

1 bulb of garlic

5-6 cups of vegetable broth

2 bay leaves

3 teaspoons brown sugar

1 teaspoon curry powder

1 teaspoon oregano

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

salt & pepper

1 cup heavy cream

~First cut your squash in half and remove the seeds.

~HALT ye grocery budget busters…

How do you fend off those pesky little convenience meals at the grocery store? The ones screaming your name from the aisles…. throwing visions of frazzled nights with not enough time to cook in your face?

You attack it with your best meal plan…halting it dead in its tracks! If I could award a cape and metal of honor to just ONE of my money-saving tips it would for sure be my meal plan. I would be a lost momma without it.

Now to be honest, it does take a little time, and a little getting used to..But in the end, you end up with a tool that helps you save money, helps you create grocery lists, and helps you form a routine for dinner time.

If you’re anything like me….you might LOVE to cook, but sometimes just LOATHE the process of deciding what to make day in and day out! I remember my mother used to say…”I don’t mind cooking, I just wish someone else would tell me what to make each day..then I’d make IT!”

Fridge Clearing Casserole….

I had marinara…..

I had parmesan and mozzarella….

I had some ground turkey….

And TONS of zucchini and squash

I decided to make a casserole and use up the leftovers in the fridge. If I don’t do this…I’ll admit, my refrigerator can become a science fair’s best friend.

~First I browned up the turkey in a skillet, adding some minced garlic, kosher salt, and a little red wine vinegar.

~ After it was nice and browned, I removed the turkey from the pan and added a little olive oil and added sliced zucchini and squash. I sautéed them for about 5 minutes…You don’t want them to get TOO soft.

Not the Normal Fried Clams

I was raised in Alaska…which I call “The land of Extremes”

It can get Extremely COLD, It stays Extremely DARK in the winter, we get an EXTREME amount of sunlight in the summer, and each summer we fill our freezer with an EXTREME amount of razor clams! (That last one is the best of the extremes in my book)

Pasta with Vodka Sauce….Can It Get Any Better?

YES…If you top the pasta with fried clams! Why not

~Let’s start with the pasta

I desperately wanted to change my husbands opinion of Vodka Sauce. I have never made this sauce for him because long ago, he told me he didn’t like it. I forgot about that comment over the years and decided to make it last night. I remembered..after having him sample the sauce while it was simmering away. He tried it annnnnd….HE LOVED IT!

The vodka sauce he remembered came from a jar- ICK!  That pungent jarred vodka flavor can ruin anyone. But oh how I love to turn an avoider into a fan, I believe it’s my mission in life. Tell me you don’t like it..I’ll show you why you will!
